Stir-fried bee pupae, a unique dish in the upland area of Tuyen Quang.
Bee pupae is almost as like as silkworm pupae but it is smaller and usually has milky white colour. Bee pupae only appears from April to August, because this is the period when bees build nest. Therefore, visitors going to upland areas in Tuyen Quang during this time will have the opportunity to enjoy stir-fried bee pupae. This is considered as a fast food, so a lot of people love it.
The bee pupae is washed and cleaned carefully then dipped in boiling water before stir-frying. Next, heat the fat in a wok, add shallots, pupae and stir fry. Then, season a little fish sauce and pepper powder to make this dish more delicious.
When the pupae becomes light golden, add a bit finely chopped lime leaves and slices of spicy chili, give another a quick stir fry and have the dish served immediately.
The strong flavor of pupae combines with the light bitter of lime leaves all make a unique dish that is especially perfect to enjoy in cold and rainy days.
