Traditional dishes from maize of the H’mong people in Tuyen Quang

An indispensable traditional dish from maize of the Mong people in Tuyen Quang is "men men" (steamed ground maize). The main ingredient to make "men men" is dried maize which is separated from the seeds and grounded. Then, cornstarch is mixed with a desirable level of water so that it is not clump or too dry. Next, steam it during 15 minutes.

People often enjoy "men men" with leaf mustard soup, "thang co" or mix "men men" with rice, giving to the dish an attractive aroma.

In addition, the H'mong people in Tuyen Quang often make corn cakes in their spare time. The main ingredient of this cake is waxy corn powder. When the corns still have the milk-like taste, they are cut, put in a stone mortar and grinded without water. When the grinding process is done, people add water into the powder to make a stickier mixture. Next, they roll it into round cakes, then fry them on a boiling pan.
