Bo khai, a speciality vegetable in Lam Binh

TQO - Bo khai vegetable (Erythropalum scandens) was recognised as OCOP product of the local people in upland areas of Lam Binh District. Previously, bo khai vegetable grew naturally in the forest, however, at the present, they are planted in people's gardens to meet the market requirements. Bo khai vegetable can be processed into many dishes such as stir-fried bo khai with eggs or beef.

With stir-fried bo khai with eggs, people just wash the vegetable, then add a little lard or cooking oil and fry the garlic to process the vegetables. People in upland areas often use lard, especially black pigs' lard to cook, so the vegetables are very fragrant and sweet. When the vegetables are just cooked, break the eggs (more or less eggs depending on the amount of vegetables) and stir well. Finally, seasoning for this dish.

In addition, many families also process this vegetable into stir-fried bo khai vegetable with beef. Vegetable and beef are stir-fried separately. When both of them are cooked, put them in a pan, and stir evenly so that the taste of the vegetable and beef are mixed. Currently, Lam Binh District has planned to develop bo khai vegetable growing areas as well as building a strategy to promote this unique OCOP product.
