Tire-track eels live naturally in the water area of Tuyen Quang. Their food includes plankton, small shrimps and crabs and fishes, snails, worms, etc. Therefore, the tire-track eel meat is sweet, firm and delicious.
For local people, Grilled tire-track eel is not only attractive dish because of its special flavour, rich composition of natural nutrients, but also helps patient reduce the fatigue and illness.
Tire-track eels chosen to prepare dishes are usually fresh tire-track eels, uneven size. Marinate the tire-track eel meat with seasoning, pepper, minced lemongrass, salt and chili for 30 minutes. Then, grill on a charcoal stove or placed inside wooden embers of a stove. The chef has to be very skillful and careful to ensure that the meat is cooked evenly and comes out golden.
The dish is best served with sliced green bananas, sour star fruit, 'me' sauce (a sauce is made from fermented rice), vegetable and herbs.
