Steamed snails in coconut water.
To make this dish, you need to choose fresh stuffed snails. Then soak them with rice water for about 2 hours to remove the fishy smell.
Next, spoil stuffed snails with 3 lemon leaves 2 slices of ginger for about 1-2 minutes. You take them out to get the snail meat and clean it with salt and vinegar to remove the mud.
Slice the snail meat, ear mushrooms, shiitake, chilli, onions, perilla, piper lolot leaves. Then mix them with minced pork and roll it into bite-sized pieces.
The snail rolls are steamed with coconut water during 10 minutes. When the snail rolls are just cooked, continue to be fried it in oil until the snail rolls are golden. Put perilla and piper lolot leaves on silver foil, add a well-beaten egg and put the fried snail rolls on top and steam for a second time during 10 minutes.
It is dipped with sauce, including minced ginger, garlic and chili, a little sugar and lime juice.
