Field carps are raised in terraced fields in Hong Thai Commune, Na Hang District by Dao Tien people.
Field carps are raised according to natural process by local people, so they are very clean. The fishes are the size of two fingers with golden colour, soft bones and sweet meat.
After being caught, the fishes are put in a pot of fresh water during three days to clean the fish's intestines, and then are processed into many different dishes.
To make grilled fish, field carp is clamped on a bamboo sticks and grilled on charcoal. The cook adjust the temperature until the fish is golden brown on both sides. The dish is often served with "me" (a kind of dipping sauce made from fermented rice) and mac khen pepper.
For the Mong ethnic group in Xuan Lap Commune, Lam Binh District, they put carp and sour leaves in fresh bamboo tubes, add salt and spices, and then put them on the wood stove to cook. Thus, the fish soup will be hot and fragrant.

If you want to preserve fish to eat gradually, you can make fish sauce from field carp. Dao Ngoc Vang in Bo Cung Hamlet, Kim Binh Commune, Chiem Hoa District said that in the commune, there is a famous brand of delicious Co Linh field carp fish sauce. In this season, local authorities encourages households having paddy field to focus on raising field carp for making fish sauce.
It is quite complex to make fish sauce. First, the cook steam sticky rice, then sprinkle yeast leaves. When the sticky rice is fermented, it is marinated with carp, galangal slices, betel leaves and magenta plant. Next, the mixture will be put in a sealed jar during 10 months. When ripen, the fish sauce has red colour and nice smell. The dish is used like a seasoning, served with fresh vegetables, boiled meat or hot rice.
Nowadays, dishes from field carps become specialties food on the menu of homestay facilities in the districts of Chiem Hoa, Na Hang and Lam Binh. Some homestay owners also instruct visitors to catch field carp, helping them have an unforgettable experience.
