Minh Huong duck is famous for its delicious taste because it is raised in the traditional way and grazed naturally, so the meat is very fragrant and firm.
To cook this dish, the cook must choose the fresh ducks and unripe dracontomelon.
Next, the dracontomelons are shaved off the shell while the duck will have to deodorize with lemon, or ginger, and vinegar. Then cut duck into medium-size pieces and marinated them with spices including onion leaf, lemongrass, ginger, garlic, coriander, etc.
The marinated duck will be stir-fried with oil until the duck meat is fragrant and firm. Put some dracontomelons in the pot and then pour the water to cover the meat. Cook on high heat until it boils, then reduce heat and braise for 30 minutes.
Braised duck with dracontomelon is often served with vermicelli. The dish has the aroma of duck meat and a slightly sour taste of dracontomelon.
