The main ingredients to make banana cakes are ripe bananas and glutinous flour. The bakers use a large knife to gently press the bananas to flatten them and dry them. When the dried bananas have shrunk and become flexible, the baker will pound them and mix them with glutinous rice flour to form a cake.
