"Ten years ago, to make molasses needed to use human power. Even, farmers had to use the strength of cattle to produce. Perhaps, it is reason that many people gave up this profession", Nguyen Phu Thao, a molasses maker said.

To create thick and fragrant molasses drops, it must go through many stages. Firstly, sugarcane trees are harvested and pressed to extract the water and then put it in a pan to boil on a continuous stove. When it boils, people will use a racket with curtain cloth net to remove and impurities. The pure sugarcane juice boiled during 2 - 3 hours will get the standard finished molasses.
In particular, the process of crystallizing sugarcane juice is the complicated. The cook must have stirring experience to yields dark, viscous blackstrap molasses. The quality of molasses depends on the source of raw materials. The sweeter the sugarcane, the sweeter the molasses.
