The ingredients are simple: duck, fresh bamboo shoots, watermint, scallions, fish sauce, soy sauce, salt, garlic and chili.
Wash the duck thoroughly under cool water. Rub ginger juice and salt on the duck to discard ducky smell. Then rinse under cold water.
Chop the duck into bite-size pieces.
Marinate the duck with this onion, ginger and a little salt for 15 minutes.
Heat a big pot, add in vegetable oil and saute the sliced onion until it turns light yellow and smells nice. Add the duck meat and saute it until the duck gets twisted.
Add water into the pot and boil it during 15 minutes.
Meanwhile, rinse bamboo shoot then cut along into fine strips.
Add bamboo into the duck pot and cook it for 45 minutes.
The dish is served with vermicelli.
